Kielbasa Stew

Last month when I shared my favorite cornbread recipe, I made mention of serving it alongside Kielbasa Stew.  Here is the promised recipe.




Kielbasa Stew

3 cups potato, cubed
2 cups carrots, sliced
2 14-ounce cans sauerkraut, drained
1 lb kielbasa or smoked sausage, sliced
½ t dried basil
1 quart chicken broth
salt & pepper to taste

Combine all ingredients in large stockpot.  Cook on medium until vegetables are tender. 

To pack some more veggies in there, add 1-2 cups roughly chopped kale or spinach near the end of the cooking time.  They will take just a couple minutes to wilt down.

  1. YUM!! I love smoked sausage and sauerkraut and I like the idea of adding some "greens" at the end!

    1. We love it too! I've seen several variations of this recipe, but this is our favorite way to serve it. Hope you give it a try sometime.
