Black Bean Brownies - Surprisingly good!

If you ask my husband what his favorite dessert is 100 times over, he'll answer "brownies" every time.  Unfortunately for a from-scratch baker like myself, his favorite brownie comes from a box.  I know - the horror!  So, if you ask me how many different recipes I've tried looking for the perfect homemade brownie for him, I'd probably also answer 100.  This is one of them.

I stumbled upon this recipe on allrecipes.com.  Although it doesn't compare to his favorite, hubz and I were both surprised to learn that Black Bean Brownies are actually very good.  This recipe is both gluten free and dairy free, for those with sensitivities.  It also uses 3 whole eggs which is good for those with a veggie drawer full of farm fresh eggs, like myself.  :)


ingredients - farm fresh eggs, homemade vanilla extract


Black Bean Brownies

1 (15.5 oz.) can black beans, drained and rinsed
3 eggs
3 T oil (I used Canola)
1/4 c cocoa powder
1 pinch salt*
1 t vanilla extract
3/4 cup dark brown sugar

*I use reduced sodium beans.  If you use regular beans, feel free to omit the salt altogether.

Preheat oven to 350°.  Lightly grease an 8x8" baking dish.  My lovely Misto oil sprayer works great for this!  Combine all ingredients in a blender and blend until smooth.

Pour into your prepared pan and bake for about 30 minutes or until the top cracks and the sides start to pull away from the pan.

I found the texture a little different than a regular brownie made with flour, but the flavor is very good.  My nephews, who are very picky about food, didn't have a clue they were any different.  Aunt Carrie's sneaky like that!

    I usually buy a mix these days. I'm hoping when my little bit is happy sitting in a high chair and snacking on something for a while I can spend more time in the kitchen.

  3. I have seen this recipe floating around, and have wanted to try it. I think I might just make these this weekend and see if anyone notices a difference! What they don't know, don't hurt them :)

  7. Throw in a 1/4 to 1/2 teaspoon cinnamon next time. It gives them a little kicker and enhances the flavors. And try replacing the 1/2 the brown sugar with honey for a really dense, moist brownie. So yummy!
