Six pints of pickled beets are in the water bath canner tonight. (Only 46 more to go if I'm to reach Hubz's goal of a pint a week!) I'm having trouble uploading pics tonight so the recipe alone will have to do. Here is the recipe - from my Grandma.
Grandma Rena's Pickled Beets
2 c white sugar
2 c water
2 c apple cider vinegar
1 tsp cloves
1 tsp allspice
1 Tbs cinnamon
Combine all ingredients and heat until sugar is dissolved. Pour over your boiled, peeled beets and boil the beets for 10 minutes. Ladle into sterilized jars and process in a water bath canner for 15 minutes.
Grandma did not specify how many beets to use, but this recipe is enough liquid for about 6 lbs of beets and will yield about 6 pints.
