Zucchini and Smoked Sausage Supper

I have several zucchini recipes I’d like to share with you, starting with this one.


Zucchini and Smoked Sausage Supper
(adapted from BHG)
½ cup Italian dressing
2 cloves garlic, minced
1 lb. smoked sausage, fully cooked
3-4 small zucchini
4-6 pieces crusty bread

Halve the smoked sausage lengthwise and slice diagonally.  Quarter the zucchini lengthwise and slice in half.  Combine the Italian dressing and garlic in a small bowl.  Add about ½ of the mixture to a large skillet over medium heat and cook sausage and zucchini for about 8-10 minutes or until zucchini is almost tender.
Meanwhile, preheat broiler.  Brush crusty bread with remaining dressing-garlic mixture and broil for 1-2 minutes or until desired doneness is reached.  Plate it up and serve!
Serves 4
Any kind of summer squash will work in this recipe.  Try it out with your family’s favorite.

  1. Oh yum! This looks wonderful. I'm so bummed squash bugs ate all my zucchini plants before they could produce.

    1. Lisa - I feel your pain. I didn't even attempt zucchini this year because of the disaster I had in 2011 with squash bugs. Luckily, a friend at work is sharing her bounty. I hope you get to partake of someone else's bounty too. :)

  5. That looks so yummy! I have an abundance of crookneck squash, and I think I will try that in place of zucchini. It's always great to find a new summer recipe, to use with all those garden veggies!!
